Susan Russo gathered up these yummy recipes to share on NPR’s website today for the Super Bowl. Get recipes for Roasted Tomatillo Guacamole, Tequila-Lime Shrimp Pizza, Chocolate-Chipotle Chili, and Maple-Beer-Chili Chicken Wings.

Ms. Russo has two upcoming cookbooks next fall so be on the look out for more tummy tingling goodness soon.

  1. For SB XLV, I cook food that represent from where both teams come from. For Pittsburgh, I asked a co-worker of mine who’s from P’Burg what were their favorite foods to eat at football parties. He gave me two ideas, Potato Cheese filled Perogies and Primanti Brother Sandwiches (Capicola Ham, Slaw, Cheese and Fr.Fries all in a sandwich). For the GB side, we made Kielbasa and Sauerkraut and a side of cheese dip. I also found a cookie cutter in the shape of a football helmet so I made cookies representing both teams and displayed them head to head, really cute. The previous year for SB XLIV because it was the Saints vs. Colts I made: Pulled Pork BBQ Sandwiches, The Big Easy Jambalaya, Creamy Macaroni and Cheese, Spicy Drumettes with Bleu cheese dipping sauce, Bruschetta, Bean Layer Dip w/ Fritos, King Cake, Bavarian Cream Pie. That year was my first attempt at trying to make foods for a SB party so I know some of the dishes did not represent either team only because I didn’t have have time due to planning this party at the last minute. Hopefully I’ll get better at this meal planning and someday (hopefully soon) any team representing the SouthWest will make it to the SB, and I can cook up some good Mexican dishes! The season is here, let’s starting making plans for our first tailgate party! :)

  2. Yum – I’m hungry already. My good friend lives in Pittsburgh and she’s never made me any of those dishes! I’ll have to work on her. :) All about the Mexican without an excuse. Can’t wait for the season and all the fun food/parties. Thanks for sharing, Bev – keep ‘em coming! :)
